Ingredients

For the Lamb Shish 🍖: 300g lamb mince, 2 tablespoons golden cumin spice blend, 1 tablespoon olive oil, 1 tablespoon lemon juice, 1 teaspoon salt, ½ teaspoon black pepper, 1 white onion, grated

For the Shirazi Salad 🥗: 1 cup tomatoes, diced, 1 cup cucumber, diced, 2 tablespoons fresh mint, chopped, 1 tablespoon Zaza Za'atar spice blend, 2 tablespoons lemon juice, 1 tablespoon olive oil, 1 teaspoon salt, ½ teaspoon black pepper

For the Zaza Za'atar Yogurt Sauce 🥙: ½ cup plain yogurt, 1 tablespoon Zaza Za'atar spice blend, 1 tablespoon olive oil, 1 tablespoon lemon juice, pinch of salt

For the Bread 🍞: 2 pieces of flatbread or pita

Cooking Instructions

Prepare the Lamb Mince 🍖: In a bowl, combine lamb mince, Golden Cumin spice blend, olive oil, lemon juice, salt, black pepper, and grated white onion. Mix well to combine. Shape the lamb mixture into small patties or skewers, pressing them together tightly.

Prepare the Shirazi Salad 🥗: In a bowl, mix together diced tomatoes, cucumber, and chopped mint. Add Zaza Za'atar spice blend, lemon juice, olive oil, salt, and black pepper. Toss everything well and set aside.
Make the Za'atar Yogurt Sauce 🥙: In a small bowl, combine yogurt, Zaza Za'atar spice blend, olive oil, lemon juice, and salt. Stir until smooth and well-mixed. Set aside.

Cook the Lamb 🍖: Preheat the oven to 375°F (190°C). Place the shaped lamb skewers or patties on a baking sheet lined with parchment paper. Roast in the oven for 15-20 minutes, or until the lamb is cooked through and slightly golden on the outside (internal temperature of 160°F for well-cooked lamb).

Serve 🥙: Warm the flatbread or pita. Place the roasted lamb skewers or patties on top, then drizzle with zaatar yogurt sauce. Serve with the Shirazi salad on the side or on top.
